BAHAN :
Daging kepiting 500 gr
Udang kupas 500 gr
Mangga muda 1000 gr
Asparagus 1000 gr
Paprika Merah 300 gr
Kelapa parut 150 gr
Jamur hitam 150 gr
Daun ketumbar 50 gr
Ubi merah 2 kg
Daun kucai 50 gr
Beras 1 kg
Daun bawang 50 gr
Mangga pure 100 ml
Saus tomat 100 ml
Sampal hainan 50 ml
Lime juice 50 ml
Gula
Telur 5
 
CARA MEMBUAT :
1. Masak nasi hingga matang, kemudian masak menjadi nasi goreng jamur.
2. Kupas ubi merah, kemudian menjadi spiral panjang dengan menggunakan alat khusus, goreng menjadi bentuk keranjang.
3. Letakkan nasi goreng kedalam keranjang ubi.
4. Cincang udang dan daging kepiting. Campurkan dengan kelapa, mangga parut, daun ketumbar, jamur shitake dan bumbui dengan garam, merica, saus tiram, minyak wijen, jahe dan bawang putih
5. Bentuk bulat pipih kemudian panggang hingga matang.
6. Letakkan 3 buah diatas piring.
7. Tuangkan air, mangga pure, saus tomat, gula, lime juice dan garam kemudian masukkan paprika merah, asparagus, onion dan mangga muda.
8. Tuangkan saus diatas piring susun, mangga, perkedel dan nasi keranjang, hidangan siap disajikan.
